All Guido Marsella wines are released for sale at least 18 months after the harvest, as the principle is to leave the must in the wine vats to mature naturally and fully. This unforced approach will allow the wines, if stored at a constant temperature in a healthy environment and away from light, to last over 10 years after bottling.
Our Fiano di Avellino DOCG is released for sale approximately 24 months after harvest.
Guido was right, at the beginning of his career, that the mineral content of the limestone soil and the presence of the Partenio mountains needed to be supported through slow, unforced vinification.
After the first harvests, 1997 and 1999, Guido encountered commercial difficulties as the widespread belief that white wines should be drunk within a few months of harvest was widespread.
Over the years, it has been proven that Fiano di Avellino, and in particular the one produced by Guido in Summonte, has the ability to release, with aging, a wealth of aromas that make it particularly complex and highly prized by industry professionals. So much so that today we also sell wines over 15 years old, guaranteeing their quality.
Every year, approximately 1,500 bottles are set aside for future sale; these bottles are stored horizontally in a dark warehouse at a temperature of 13°C, 24 hours a day.
In 2020, the FIANO DI AVELLINO DOCG RISERVA designation was introduced into the production regulations. This designation requires a minimum 12-month aging period starting on November 1st of the harvest year, something Guido Marsella anticipated by almost 30 years, which is why he is now called a “pioneer.”
