After vinification, the resulting wine is aged in stainless steel tanks for approximately 12 months.
No blending is used in our wines, despite the regulations allowing it; our wines are pure varietals.
The bottling process takes place using a bottling system that saturates the bottle with nitrogen before adding the wine, to preserve the organoleptic characteristics of the product.
The Wines
The timing of the harvest is dictated by the grapes, which are harvested strictly by hand when their characteristics are optimal.
The harvested grapes are transported to the cellar as quickly as possible, where the winemaking process begins, entrusted to a modern facility that uses all the necessary technologies to ensure a perfect production process.
Alcoholic fermentation is carried out at a controlled temperature and is entrusted to selected yeasts.
The bottles are sealed with a natural cork.
The bottles are stored horizontally in galvanized racks. The storage environment is free from light and maintains a temperature of 13°C. During this phase, labels are not applied to the stored bottles to prevent the formation of foreign bodies, odors, or mold, given the low temperature.
